• Rehydration: One ounce of freeze-dried mirepoix rehydrates to roughly 10 ounces of fresh diced and blanched mirepoix, so this package yields about 25 ounces when rehydrated.
• Preparation: Rehydrate with water for a few minutes, then heat and serve. The product can also be eaten directly from the bag as a crunchy, nutritious snack.

Storage & Shelf Life

• After opening: Reseal the bag with the built-in zip closure and keep the included oxygen absorber and desiccant. Once opened, expect a remaining shelf life of about 3 months to 1 year, depending on conditions. Using a home vacuum sealer to remove residual air can extend the life considerably.
