Preparation

• Mix 1 gallon of neutral sorbet base, 1 gallon of flavor base, and 2.5 gallons of water in a batch freezer to yield about 20 quarts of Italian ice.
• For stronger flavor and to help preserve freshness, add 1 to 2 ounces of citric acid to the mix before freezing.
• Shake containers well before use to ensure contents are properly blended.

Storage & Handling
